Viticulture : Sustainable farming – the domaine is now organic certified. Old vines (30 years). Manual harvest.
Winemaking technique: Fermentation in a mix of steel and concrete tanks, followed by a 4 weeks maceration to extract flavours, tannins and colours.
Aging: 15 months in oak barrel.
Tasting notes:
This cuvée opens with notes of black fruit and elegant oak. Volume, softness, supple and silky tannins, persistence: for the mind, but also for the body.
It is a complex, silky and smooth wine that will benefit decanting. It then develops aromas of cherry, raspberry, blackcurrant and hints of spice and liquorice. Very well balanced, almost jammy, this wine is perfect on a steak or even on white meats.
