Ageing: The grapes are generally destemmed and then soft pressed. Only a small percentage (about 10%) are left intact with the stem during fermentation, to give more structure and complexity to the wine. Fermentation takes place at a controlled temperature and lasts about 3 weeks. Frequent remontage and delestage are carried out during fermentation in order to achieve soft extraction and concentration of aromas. After racking, malolactic fermentation occurs to increase the stability and roundness of the wine.
LaMura Nero d’Avola 2021
For many years now, Sicily has led the way in Southern Italy in the production of innovative wines from indigenous varieties. Completely organic, with vineyards resting on the coast of Sicily, grapes bathed and pampered by the air of the Mediterranean sea and fattened by plenty of sunlight, the vines are naturally free of parasites and illnesses. La Mura represents modern winemaking in Sicily, from indigenous varieties and reflects the diverse elements of Sicilian territories.
